Dehydrated meat has several advantages: it guarantees higher safety as far as conservation is concerned, preventing the risk of bacterial multiplication and early alterations; it improves handling during food processing, being able to include greater quantities of raw proteins in the recipe than using fresh meat, which contains much more water than dehydrated meat.
